Why add baking soda to wine? A little known but very useful trick

The  wine  you buy at the store isn't just made from grapes pressed and left to ferment. Purchased in bottles from store shelves, it may contain many other substances and additives that have the role of improving its aroma and longevity. Most producers use sulphites, substances whose role is to make the wine more resistant and to prolong its life. Acidity regulating additives are added in the case of production of poor quality grapes which can lead to a wine that is too acidic or too sweet.

To check whether the wine you buy is natural or not, just add a little baking soda.

What do many colorful fruits and vegetables, such as blueberries, cherries, red cabbage or beets, have in common? All contain anthocyanins, natural pigments with beneficial effects on health, due to the fact that they act as antioxidants in the human body. In chemistry, anthocyanins are used as indicators of acids, their color changing depending on the pH of the substance with which they come into contact.

While alkalinity turns anthocyanins blue, acidity turns them red. Since the wine is already acidic, the anthocyanins in the wine are red. But when you expose these anthocyanins to alkaline factors, they start to turn blue. Baking soda, being alkaline, is recommended for testing the quality of wine.

What happens if you add baking soda to wine?

If you bought a  bottle  of wine and you doubt its quality, baking soda is the way to go. Pour some into a glass then add a teaspoon of baking soda. If the wine changes from red to blue, it means the wine is natural. If the solution becomes clear or if no change is observed, it means that the wine in the glass is not of good quality and is rich in additives and colorings.

Baking soda can reduce the acidity of wine. How to use it ?

Baking soda is the secret of producers when they want to correct the acidity of wine. Too acidic wine is one of the problems often faced by those who make their own wine, from their own grape cultivation.

You can add a little baking soda if you want to correct the acidity of the wine. All you have to do is add one teaspoon  of  baking soda per four liters of wine. Mix well, then let the powder dissolve and work. It will neutralize acidity and add a better taste to the wine. Do not add more than a teaspoon of baking soda to four liters of wine as the taste of the wine may be altered and taste slightly salty.
